ingredients
10 slices of bacon, crumbled
1 1/2 lbs. of chicken breast
1 cup of chopped onion
1 cup of chopped bell pepper
2 garlic cloves, minced
8 cups of chicken broth
3 cups of frozen corn
1 can of creamed corn
1/2 cup of corn starch
2 cups of milk
salt and pepper to taste
1 cup of shredded cheddar
2 cups of shredded mozzarella
cook bacon until browned and crisp. when cool, reserve 2 tbsp of bacon grease.
saute chicken, onion, bell pepper, and garlic in bacon grease. cook 3-5 minutes.
in a large pot, mix sauteed ingredients with broth and corns. combine cornstarch and milk and stir into soup. heat to boiling stirring constantly. reduce heat and simmer for 15 minutes. add salt, pepper, and cheeses. stir until cheese is melted.
serve hot and top with crumbled bacon.

DeleteThat sounds delicious! I've only tried corn chowder once - it was a Nigella recipe and it didn't have any meat in it and was kinda bland. But a corn chowder with bacon - I'm in!!!!
